🔪 Soba Cutting Experience
At the restaurant Hitotoki, located in an area where the Edo-period town layout still remains, you will cut two types of soba: 100% buckwheat soba prepared in advance through the hon-nobashi stage, and yuzu soba made with yuzu from Yuwaku.
While observing the craftsman’s precise movements up close, you will also experience cutting soba with your own hands.

🥢 Lunch Kaiseki
You will then enjoy a lunch kaiseki prepared using the soba you have cut yourself.
The menu is specially arranged for this tour, in harmony with the flow of the experience.

🧉 Time with the Chef
While enjoying the meal, you will have time to engage with the chef and learn about their approach to cuisine.
In addition, from the perspective of a food wholesaler who works closely with chefs,
we will share the stories of the producers and ingredients behind the dishes.

🏺 Visit to Antique Tōda
After the meal, we move to Antique Tōda.
Listening directly to Mr. Tōda, the owner, you will learn about the tableware used during the meal as well as traditional vessels from Kanazawa.
You will have time to hold the pieces in your hands and examine them closely.
