At Hitotoki, a restaurant located in an area that retains its historic Edo-period townscape, experience the art of soba cutting.
Using carefully prepared 100% buckwheat soba and yuzu-infused soba made with locally grown Yuwaku yuzu, you will learn the techniques of soba cutting while observing the craftsmanship of a skilled artisan up close.
