🏺 Discover Tableware
Visit an antique gallery in Hirosaka, close to Kenrokuen Garden and the 21st Century Museum of Art. Enjoy a conversation with the gallery owner as you view pieces of Kutani ware and Wajima lacquerware, learning how to appreciate tableware. Pieces you fall in love with are available for purchase.
🍵 Blend Your Own Tea
Visit the direct retail shop of a Kaga bocha (roasted tea) factory at Omicho Market, the kitchen of Kanazawa. Combine Kaga bocha and green tea with herbs and spices to create your own original blend, one found nowhere else in the world. You’ll take your finished blend home with you.
💧 Witness the Moment Water Becomes Dashi
Visit Kappo Yuzuru, a small restaurant that welcomes only one party per day. Experience the process by which spring water drawn by the chef himself from Iozen-Yuwaku, together with hand-shaved bonito flakes prepared before your eyes, becomes a clear, transparent dashi.
🍽️ Your Meal, Served in the Tableware You Saw That Afternoon
The dishes you enjoy in the evening are served on tableware sharing the same cultural heritage as the pieces you viewed earlier in the day. Feel the negative space created once a dish is plated, the interplay of color with the ingredients—something impossible to grasp from viewing tableware alone.
🍵 One Last Cup of Tea
At the end of the meal, the tea you blended that afternoon returns, served alongside a Japanese sweet. In this final cup, the memories of tableware, tea, water, and the people you met throughout the day come together as one.
