Beyond a Single Piece of Sushi, Kanazawa Comes Into View

Kanazawa Gastronomy Experience: Tracing Mount Hakusan's Water and a Culture of Fermentation

From the Edo through the Meiji era, kaisen-bune trading ships sailed the Sea of Japan, and long voyages depended on one thing above all: clean water that would not spoil. Minogawa, fed by the pure underground streams of Mount Hakusan, became a crossroads for travelers seeking that water—and, in time, home to its own distinctive culture of fermentation.

This journey traces how Mount Hakusan’s water nurtured Minokawa’s fermentation culture, flows onward to the soy sauce breweries of Ono, and finally comes together in a single piece of sushi.
